Let the Excitement Commence!

San Diego is about to get its first whole animal butcher shop, offering locally sourced, sustainable meat products with no hormones or antibiotics. That means I won’t have to get my pastured ham from an Amish farm in Pennsylvania! Not that I am complaining – I am grateful for that resource. But I much prefer my meat that is not so well-traveled.

A Whole Animal Butcher Shop Is A Rare Thing These Days

My husband, Ken, was raised on a farm. He was always in charge of the head cheese. He said that his grandfather’s motto was “The only thing we don’t use from this pig is the ‘Oink.'” Well, located in North Park, The Heart & Trotter‘s mission is to provide San Diego with the highest quality, local, and sustainable meats and meat products – with zero waste.

As stated on their website:

The Heart and Trotter (“H&T”) is a whole animal butcher shop opening in San Diego, California. All of our beef, lamb, pork, and chicken will be sourced from local, sustainableantibiotic and hormone-free family farms. We will receive humanely-raised, whole animals from farms within a 250-mile radius of San Diego. More than just offering traditional cuts of meat, The Heart and Trotter utilizes every edible part of the animal to make our products including: fresh sausages, pates, rillettes, stocks, charcuterie, dog-food, and more. Our promise is that nothing will go to waste

Finding locally sourced, real food has been such a challenge for our family since we decided to eat more traditionally. For the past couple of years, we HAVE been able to get our grass-fed, pastured meat from a butcher in California.  At least we’ve had somewhere to buy grass-fed marrow & knuckle bones for super-nutritious, gelatinous bone broth! But we are just giddy with anticipation for this truly local, San Diego based butcher to open.

Slated To Open In November!

The Heart and Trotter will bring back the neighborhood butcher shop that has seemed to have disappeared due to the big box stores. As a city we are caring more and more about where and how food was raised and we intend to help facilitate this way of life,” – Trey Nichols, butcher.
